Nancy Scott Eastman, M.S., R.D., C.D.

Nancy is a Registered Dietitian (R.D.) from Wenatchee, WA. She grew up in Pomeroy, Washington then worked several years for the U.S. Forest Service during the summers & several ski areas during the winters. She later received M.S. & B.S. degrees from Central Washington University. She also received a B.A. degree & completed her dietetic internship from Washington State University. She has been an R.D. since 1994 & has worked as a consultant in long term care facilities for the past 16 years. She has retired to start a small fruit and veggie farm. She has been concerned about the consistency & accuracy of the preparation of food textures & fluid consistencies for those diagnosed with dysphagia. Many questions come up given the vast differences in the chewing & swallowing functions of our patients. Jennifer & Nancy hope that this website will help cooks in the home, in hospitals, & in nursing homes to be able to quickly see, at a glance from their cell phones or computers, how individual foods/fluids need to be prepared given each of the various restrictions.
